Ingredients (serves 2)

1 red chilli
1 clove garlic
Olive oil
400g tin butterbeans
100g frozen soy beans (broad beans or even peas)
220g raw king prawns
50g raw chorizo
100ml chicken stock
Juice of half a lemon
Handful of roughly chopped parsley

Slice the garlic and chilli and fry in a little olive oil over a medium heat for two or three minutes, until beginning to soften but not taking on any colour.

Pour the butter beans into a colander, briefly rinse under running water, drain well and add to the garlic and chilli oil.

Add the chicken stock and bring to a gentle simmer.

After two to three minutes, add the soy beans (or broad beans) to the pan and simmer for five minutes or until the beans are tender.

Slice the chorizo into diagonal pieces and cook over a high heat in a large frying pan. Keep moving the chorizo around the pan and after five minutes, when it has started to release red oil and darken around the edges, add the king prawns, cooking for a further two to three minutes until opaque and cooked through.

Add the prawns and chorizo to the bean mixture along with the lemon juice, chopped parsley, plenty of black pepper and a little salt. Serve immediately.
